Swedish Kladdkaka

3 eggs
2 ½ cups sugar
1 tsp. vanilla extract
6 Tbsp cocoa powder (cake tastes better if it is of good quality and the baking kind)
1 cup flour
5 oz. butter (10 Tbsp)
Zest of ½ orange (or lemon)

  1. Preheat oven to 350 degrees.
  2. Grease a round cake pan, I usually use a spring-loaded one and place some baking paper on the bottom.
  3. Use a mixer of any kind and mix the butter and the sugar to a crumbly paste.
  4. Add the eggs and the vanilla extract to the mixture and beat on the highest setting.
  5. Add the cocoa powder, the flour, and the orange zest. Beat again on the medium setting. The batter will be very thick.
  6. Pour into cake form and bake in oven for 45-50 minutes, until a toothpick comes out of the center of the cake fairly dry. The cake should be a little moist in the middle when finished.
  7. Let the cake cool a bit, remove it from the cake pan and then sift a thin layer of powdered sugar over it.

    It’s ready to serve! Yum!
